- 2½ lbs russet potatoes peeled and cubed
- 1 tsp salt
- ¾ cup milk whole or 2%
- 8 Tbsp unsalted butter
- ¼ cup sour cream
- 8 oz Colby Jack cheese shredded
- 8 oz bacon chopped and cooked
- 2 Tbsp chopped green onions or chives
Boil potatoes until tender, then drain.
Heat milk and butter until melted; stir in sour cream.
Mash potatoes and mix in the warm milk mixture.
Transfer to a baking dish and top with cooked bacon and shredded cheese.
Cover with foil and bake at 375°F for 25 min. Uncover and bake 10 min more.
Garnish with green onions and serve hot.
