- 4 large potatoes peeled and cubed
- ½ tsp salt
- 8 oz bacon chopped
- 4 Tbsp unsalted butter
- ½ medium onion finely chopped
- 2 garlic cloves minced
- ¼ cup all-purpose flour
- 2½ cups whole milk
- 2½ cups chicken broth
- 1 cup cheddar cheese shredded
- ¾ cup sour cream
- 1 tsp salt or to taste
- ¼ tsp black pepper
- Green onions to serve
Boil potatoes in salted water until tender, 8–10 minutes. Drain.
Cook bacon until crispy. Remove and reserve 1 Tbsp bacon grease.
Sauté onions in butter and bacon grease. Add garlic and cook briefly.
Whisk in flour. Slowly add milk and broth, whisking constantly.
Add potatoes, salt, and pepper. Simmer for 5 minutes.
Stir in sour cream, cheddar cheese, and half the bacon. Heat through.
