Ingredients
  

  • 4 large ripe tomatoes hard to the touch
  • 2 garlic cloves pressed
  • 1/4 small white onion finely diced (or red or yellow)
  • 1/2 small bunch fresh dill basil, parsley, or cilantro
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Kosher salt and black pepper to taste

Instructions
 

  • Slice tomatoes into 1/3-inch thick slices.
  • Finely chop garlic, onion, and herbs.
  • In a small bowl, mix olive oil, balsamic vinegar, honey, garlic, onion, and herbs.
  • Arrange tomato slices on a platter. Season with salt and pepper.
  • Spoon marinade over tomatoes.
  • Cover and refrigerate at least 1 hour before serving.
