- ½ cup olive oil
- ⅓ cup fresh oregano chopped
- ¼ cup fresh mint leaves chopped
- ¼ cup fresh thyme
- ½ cup crumbled feta
- 2 garlic cloves crushed
- ½ cup chopped olives green and/or Kalamata
- Zest and juice of 1 lemon
- 1 tablespoon honey
- Salt to taste
In a bowl or shallow dish, combine olive oil, herbs, feta, garlic, olives, lemon zest and juice, and honey. Stir gently.
Taste and add salt if needed.
Serve with warm bread or let rest for 15 minutes before serving.
