- 2 cups frozen corn kernels or fresh, cooked
- 1/4 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 tsp baking powder
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- 1/4 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 large eggs
- 1/4 cup milk
- 2 tbsp chopped cilantro
- 1/4 cup grated cotija cheese
- 2 tbsp vegetable oil for frying
- 1 tbsp fresh lime juice for garnish
- Extra chili powder + cotija for topping optional
Mix dry ingredients in a large bowl.
Stir in eggs, milk, cilantro, corn, and cotija.
Heat oil in a skillet over medium-high.
Drop batter by tablespoonfuls, flatten slightly, and fry 2–3 minutes per side.
Drain on paper towels.
Drizzle with lime juice and garnish as desired.
