- 1 tablespoon olive oil
- 1 small yellow onion finely diced
- 8 oz mushrooms sliced
- 2 cloves garlic minced
- 1 cup long-grain rice rinsed and drained
- 2 cups chicken broth
- Salt and pepper to taste
- Fresh parsley chopped (optional, for garnish)
Rinse rice until water runs clear. Slice mushrooms and dice onion.
Heat butter and olive oil in a large pan over medium-high heat.
Sauté mushrooms until golden and moisture evaporates, about 5–7 mins.
Add onion and cook until soft, about 3–4 mins.
Stir in garlic and cook 30 seconds.
