Ingredients
  

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small yellow onion finely diced
  • 8 oz mushrooms sliced
  • 2 cloves garlic minced
  • 1 cup long-grain rice rinsed and drained
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Fresh parsley chopped (optional, for garnish)

Instructions
 

  • Rinse rice until water runs clear. Slice mushrooms and dice onion.
  • Heat butter and olive oil in a large pan over medium-high heat.
  • Sauté mushrooms until golden and moisture evaporates, about 5–7 mins.
  • Add onion and cook until soft, about 3–4 mins.
  • Stir in garlic and cook 30 seconds.

Notes

  • Swap chicken broth with vegetable broth for a vegetarian version.
