For the Skillet:
- 1 lb lean ground beef
- 1 cup orzo pasta
- 1 medium onion finely chopped
- 3 cloves garlic minced
- 1 can 14.5 oz diced tomatoes with herbs
- 2 ½ cups low-sodium beef broth
- 2 –2½ cups fresh spinach or other greens
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 1 tbsp olive oil
Heat olive oil in a large skillet over medium heat.
