Ingredients
  

  • 4 6-ounce cod fillets
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • 4 tablespoons unsalted butter
  • 1 garlic clove minced
  • Juice of 1/2 lemon
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon fresh chives snipped

Instructions
 

  • Pat cod fillets dry with paper towels and season both sides with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat until shimmering.
  • Add cod fillets and cook for 4 minutes on one side until golden brown.
  • Flip carefully and cook for another 3 minutes, or until the fish flakes easily.
  • Remove cod and keep warm, tented with foil.
  • In the same skillet, reduce heat to medium.

Notes

  • You can use haddock or halibut if cod isn’t available.
  • Dried herbs can work in a pinch, but fresh herbs offer the best flavor.
  • Don’t overcook the cod—remove it from the pan as soon as it flakes.
