Ingredients
  

For the Crust:

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 8 tbsp cold unsalted butter
  • 2 eggs

For the Filling:

  • 2 cups whole milk ricotta
  • 1 ½ cups shredded mozzarella
  • 1 cup diced provolone
  • ½ cup grated Parmesan or Pecorino Romano
  • 1 ½ cups diced cured meats salami, prosciutto, soppressata, etc.
  • 4 eggs
  • ½ tsp black pepper

Instructions
 

  • Make crust, divide in half, and chill.
  • Combine all filling ingredients in a large bowl.
  • Roll out bottom crust and fill with mixture.
  • Top with second crust, seal edges, vent, and egg wash.
  • Bake at 350°F for 75–90 minutes. Cool before slicing.

Notes

  • Be sure to drain ricotta well to avoid a watery filling.
  • You can use a mix of Italian cold cuts—try mortadella, capicola, or even cooked sausage.
