Ingredients
  

  • ½ lb ground Italian sausage
  • 1 medium yellow onion minced (¾ cup)
  • 4 large eggs
  • 2 Tbsp fresh parsley or chives minced
  • 1 cup shredded Colby Jack cheese divided
  • ¼ cup whipping cream
  • ¼ tsp salt
  • 2 medium potatoes about 12 oz, peeled and grated
  • ½ Tbsp butter plus more for greasing dish

Instructions
 

  • Sauté sausage. Add onion and cook until soft.
