- 3 large eggs
- 1 cup all-purpose flour
- ⅔ cup milk
- ⅔ cup water
- 3 tablespoons melted butter
- 1 tablespoon chopped fresh parsley
- ¼ teaspoon dried basil
- ¼ teaspoon red pepper flakes
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- Zest of one lemon
- Butter for coating pan
- 12 slices Swiss cheese
- 8 ounces sliced mushrooms sautéed in olive oil with salt and pepper
- 1-2 cups cooked shredded turkey seasoned with salt, pepper, and thyme
- Chopped parsley for garnish
In a medium bowl, whisk together eggs, flour, milk, water, melted butter, parsley, basil, red pepper flakes, salt, pepper, and lemon zest until smooth.
Heat a non-stick pan over medium-low heat and lightly coat with butter.
Pour in a small amount of batter, swirling to cover the bottom.
Cook for 1-2 minutes until edges lift, then flip and cook the other side briefly.
