Ingredients
  

  • 3 large eggs
  • 1 cup all-purpose flour
  • cup milk
  • cup water
  • 3 tablespoons melted butter
  • 1 tablespoon chopped fresh parsley
  • ¼ teaspoon dried basil
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon salt
  • teaspoon pepper
  • Zest of one lemon
  • Butter for coating pan
  • 12 slices Swiss cheese
  • 8 ounces sliced mushrooms sautéed in olive oil with salt and pepper
  • 1-2 cups cooked shredded turkey seasoned with salt, pepper, and thyme
  • Chopped parsley for garnish

Instructions
 

  • In a medium bowl, whisk together eggs, flour, milk, water, melted butter, parsley, basil, red pepper flakes, salt, pepper, and lemon zest until smooth.
  • Heat a non-stick pan over medium-low heat and lightly coat with butter.
  • Pour in a small amount of batter, swirling to cover the bottom.
  • Cook for 1-2 minutes until edges lift, then flip and cook the other side briefly.

Notes

  • You can substitute Swiss with Gruyère or provolone if preferred.
  • These crepes can be prepped ahead and reheated in the oven.
