Slow Cooker Chicken with Carrots and Potatoes

A hearty and wholesome one-pot meal with chicken tenders, baby carrots, and Yukon Gold potatoes, all simmered in a buttery garlic-herb sauce. Just toss everything into your slow cooker and let it do the work!

Ingredients
  

  • 1 1/2 lbs. boneless skinless chicken tenders or breasts
  • 1 lb. bag baby carrots
  • 1 1/2 lbs. Yukon Gold potatoes cut into wedges
  • 1/2 cup salted butter melted
  • 1 Tbsp. minced garlic or 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. dried thyme leaves
  • 1 tsp. dried parsley

Instructions
 

  • Add chicken to the centre of the slow cooker.
  • Arrange potatoes on one side and carrots on the other.
  • In a small bowl, whisk melted butter, garlic, salt, pepper, thyme, and parsley.
  • Pour butter mixture evenly over chicken and vegetables.
  • Cover and cook on HIGH for 4 hours or LOW for 6–8 hours.
  • Serve warm, spooning any extra sauce over the top.

Notes

  • Chicken breasts can be used in place of tenders—just cut into smaller pieces.
  • Yukon Gold potatoes hold their shape well, but red potatoes or even sweet potatoes can also be used.
  • If you prefer extra-crispy edges, broil the chicken and potatoes for 5 minutes after cooking.
