- ¾ cup buttermilk
- 1 large egg
- 1 tablespoon Cajun seasoning
- 1 cup flour
- 1 tablespoon Cajun seasoning for dredging
- 2 tablespoons cornstarch
- 1 teaspoon baking powder
- 4 cups vegetable or peanut oil for frying
For the sandwiches:
