Ingredients
  

  • 4 slices bacon cooked crispy and crumbled
  • 3 tbsp reserved bacon grease or olive oil
  • ½ white onion diced
  • 1 red bell pepper diced
  • 6 cups fresh spinach
  • Salt and pepper to taste
  • 8 large eggs
  • ½ cup milk
  • ½ cup shredded sharp white cheddar or Gruyère

Instructions
 

  • Preheat oven to 350°F.
  • Cook bacon in a large oven-proof skillet.
  • Remove bacon and reserve 3 tbsp of grease.
  • Sauté onion for 1 minute, then add bell pepper and cook 4 more minutes.
  • Stir in spinach a little at a time until fully wilted.
