- 4 slices bacon cooked crispy and crumbled
- 3 tbsp reserved bacon grease or olive oil
- ½ white onion diced
- 1 red bell pepper diced
- 6 cups fresh spinach
- Salt and pepper to taste
- 8 large eggs
- ½ cup milk
- ½ cup shredded sharp white cheddar or Gruyère
Preheat oven to 350°F.
Cook bacon in a large oven-proof skillet.
Remove bacon and reserve 3 tbsp of grease.
Sauté onion for 1 minute, then add bell pepper and cook 4 more minutes.
Stir in spinach a little at a time until fully wilted.
