Ingredients
  

Strawberry Scone Ingredients:

  • 2 cups all-purpose flour
  • 3 Tbsp granulated sugar
  • 1 Tbsp baking powder
  • ½ tsp fine sea salt
  • ½ cup unsalted butter 8 Tbsp, chilled and diced
  • 1 cup chopped fresh strawberries
  • 1 large egg
  • ½ cup heavy whipping cream chilled
  • 1 Tbsp milk for brushing
  • ½ Tbsp coarse sugar for topping

Glaze Ingredients:

  • cup powdered sugar
  • 1 Tbsp milk

Instructions
 

  • Preheat oven to 400°F. Sift flour, sugar, baking powder, and salt in a large bowl.
  • Cut in butter until crumbly. Fold in strawberries.
  • Whisk egg with cream and add to flour mix.
  • Stir until just combined.
  • Shape dough into a circle on floured parchment.
  • Cut into 12 wedges and space slightly.

Notes

  • Use very cold butter and cream to get tender, flaky scones.
  • Don't overmix the dough—stop stirring as soon as it comes together.
  • You can substitute the glaze with a lemon glaze by using lemon juice instead of milk.
  • Store in an airtight container at room temperature for up to 2 days or in the fridge for up to 4 days. Freeze unglazed scones for up to 1 month.
