Ingredients
  

For the Salad:

  • 3 cups strawberries chilled, tops removed and sliced
  • 3 cups watermelon chilled, cubed (seedless if possible)
  • 2 tablespoons fresh mint finely chopped or chiffonade
  • ½ cup crumbled feta cheese
  • ½ teaspoon chia seeds

For the Dressing:

  • 2 tablespoons olive oil
  • Juice of 1 fresh lime
  • teaspoons honey or maple syrup for vegan
  • Crushed sea salt flakes to taste
  • Black pepper to taste

Instructions
 

  • In a small bowl or jar, mix olive oil, lime juice, honey, sea salt, and pepper.
  • Shake or whisk well and set aside.
  • Slice strawberries and cube watermelon.
  • Arrange fruit on a serving platter. Sprinkle with mint, feta, and chia seeds.
  • Drizzle with dressing. Add more lime juice, sea salt, and pepper if desired.
  • Serve immediately and enjoy!
