Ingredients
  

  • 4 ripe avocados
  • Juice of 1 lime
  • 1 Tbsp. extra-virgin olive oil
  • 1 medium onion chopped
  • 1 lb. ground beef
  • 1 packet taco seasoning
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 2/3 cup shredded Mexican cheese
  • 1/2 cup shredded lettuce
  • 1/2 cup quartered grape tomatoes
  • Sour cream for topping

Instructions
 

  • Halve and pit the avocados. Scoop out a bit to enlarge the well, dice and set aside.
  • Drizzle with lime juice.
  • Heat oil in a skillet, cook onion until soft. Add beef and taco seasoning.
  • Cook until browned. Season and drain fat.
  • Fill each avocado half with beef.
  • Top with diced avocado, cheese, lettuce, tomatoes, and sour cream.
