- 4 ripe avocados
- Juice of 1 lime
- 1 Tbsp. extra-virgin olive oil
- 1 medium onion chopped
- 1 lb. ground beef
- 1 packet taco seasoning
- Kosher salt to taste
- Freshly ground black pepper to taste
- 2/3 cup shredded Mexican cheese
- 1/2 cup shredded lettuce
- 1/2 cup quartered grape tomatoes
- Sour cream for topping
Halve and pit the avocados. Scoop out a bit to enlarge the well, dice and set aside.
Drizzle with lime juice.
Heat oil in a skillet, cook onion until soft. Add beef and taco seasoning.
Cook until browned. Season and drain fat.
Fill each avocado half with beef.
Top with diced avocado, cheese, lettuce, tomatoes, and sour cream.
