Ingredients
  

  • 5 sweet bell peppers cut into 1-inch rings
  • 1.5 lb ground turkey
  • 2 green onions chopped
  • 2 tbsp taco seasoning
  • 1 egg
  • 2 oz cheddar cheese cubed
  • 2 oz Monterey Jack cheese cubed
  • ½ tsp salt

Instructions
 

  • Preheat oven to 400°F. Spray a baking sheet and arrange pepper rings.
  • In a bowl, mix turkey, onions, seasoning, egg, cheeses, and salt.
  • Divide meat mixture among pepper rings.
  • Bake 20–30 minutes until fully cooked.
  • Serve with sour cream, salsa, or cilantro.

Notes

  • You can use ground beef or chicken instead of turkey.
