- 5 sweet bell peppers cut into 1-inch rings
- 1.5 lb ground turkey
- 2 green onions chopped
- 2 tbsp taco seasoning
- 1 egg
- 2 oz cheddar cheese cubed
- 2 oz Monterey Jack cheese cubed
- ½ tsp salt
Preheat oven to 400°F. Spray a baking sheet and arrange pepper rings.
In a bowl, mix turkey, onions, seasoning, egg, cheeses, and salt.
Divide meat mixture among pepper rings.
