For the Dough:
- 3 cups all-purpose flour
- 1 tsp salt
- 8 tbsp vegan butter cold, cubed
For the Filling:
- 1 ½ cups vegan ricotta store-bought or homemade
- 1 cup shredded vegan mozzarella
- 1 cup chopped vegan meats seitan, vegan ham, vegan sausage
- ½ cup Just Egg or egg replacer
- Salt and black pepper to taste
- 2 tbsp Just Egg or plant milk for vegan egg wash
Make and chill dough.
Mix all filling ingredients in a large bowl.
Roll out bottom crust, place in pan, and fill.
Add top crust, seal, vent, and brush with vegan egg wash.
Bake at 375°F for 50–60 mins. Cool before slicing.
