- 1 lb chicken breast diced
- 1 medium onion chopped
- 1 zucchini quartered lengthwise and chopped
- 2 Tbsp extra-virgin olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp cumin
- 1 tsp sea salt or to taste
- ¼ tsp black pepper or to taste
Preheat oven to 425°F.
In a bowl, whisk oil, garlic powder, paprika, oregano, cumin, salt, and pepper.
Add chicken, onion, and zucchini; toss to coat.
Marinate 15 min or refrigerate up to 24 hr.
Spread in a baking dish; bake 30 min, stirring halfway, until chicken is cooked and veggies are tender.
Serve hot.
