Ingredients
  

  • 1 lb chicken breast diced
  • 1 medium onion chopped
  • 1 zucchini quartered lengthwise and chopped
  • 2 Tbsp extra-virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 1 tsp sea salt or to taste
  • ¼ tsp black pepper or to taste

Instructions
 

  • Preheat oven to 425°F.
  • In a bowl, whisk oil, garlic powder, paprika, oregano, cumin, salt, and pepper.
  • Add chicken, onion, and zucchini; toss to coat.
  • Marinate 15 min or refrigerate up to 24 hr.
  • Spread in a baking dish; bake 30 min, stirring halfway, until chicken is cooked and veggies are tender.
  • Serve hot.
