Ingredients
  

  • 1 1/2 lb salmon fillet pin bones removed
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • 1 tbsp Dijon mustard
  • 2 garlic cloves minced
  • Salt and freshly ground black pepper to taste
  • 4 lemon slices for topping

Instructions
 

  • Preheat oven to 450°F.
  • Line a baking sheet with parchment or foil.
  • Cut salmon into 4 pieces.
  • Arrange skin-side down on baking sheet.
  • In a bowl, whisk olive oil, lemon juice, Dijon mustard, parsley, garlic, salt, and pepper.

Notes

  • You can substitute dried parsley if fresh isn’t available.
  • Leftovers can be stored in the fridge for up to 2 days and served cold over salad.
