- 1 1/2 lb salmon fillet pin bones removed
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- 2 tbsp chopped fresh parsley
- 1 tbsp Dijon mustard
- 2 garlic cloves minced
- Salt and freshly ground black pepper to taste
- 4 lemon slices for topping
Preheat oven to 450°F.
Line a baking sheet with parchment or foil.
Cut salmon into 4 pieces.
Arrange skin-side down on baking sheet.
In a bowl, whisk olive oil, lemon juice, Dijon mustard, parsley, garlic, salt, and pepper.
