Ingredients
  

  • 1 1/2 lbs chicken breasts finely diced
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour
  • 1 cup shredded mozzarella cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Oil for frying

Instructions
 

  • In a bowl, combine chicken, eggs, mayo, flour, cheese, salt, and pepper. Mix well.
  • Cover and refrigerate the mixture for at least 2 hours.
  • Heat oil in a skillet over medium heat.
  • Scoop and shape the chilled mixture into patties.
  • Cook each side for 3–4 minutes, until golden and cooked through.

Notes

  • For extra flavor, mix in fresh herbs like dill or parsley.
