- 1 1/2 lbs chicken breasts finely diced
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour
- 1 cup shredded mozzarella cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- Oil for frying
In a bowl, combine chicken, eggs, mayo, flour, cheese, salt, and pepper. Mix well.
Cover and refrigerate the mixture for at least 2 hours.
Heat oil in a skillet over medium heat.
Scoop and shape the chilled mixture into patties.
Cook each side for 3–4 minutes, until golden and cooked through.
